This amazingly easy sheet pan kielbasa and veggies recipe has easily become one of my favorite meals. It’s not just because it tastes good, either. I’m not sure about you all, but my kiddos just started Spring Break today. During these crazy but fun times I don’t always have enough time or energy to cook a big fancy meal. Today rather than share a food outing with you, I thought I would share one of my favorite quick fix meals.
I know that sheet pan meals have been all the buzz for a few years now. I don’t do them often (no offense to those who do, I just have a different cooking style), but when I do this is one of my favorites. Let me just assure you, this one is so easy. It only takes minutes to prepare, and almost anything goes.
Here’s the fun part…the ingredients can be whatever you want them to be. For us, here is what we normally use:
- Butterball Turkey Sausage Polska Kielbasa, 13 oz
- Frozen Broccoli Florets (we typically use Great Value or Food Lion brands, but it could be any brand you prefer), approximately 20 oz
- Peeled baby carrots, approximately 20-30 carrots
- 1 small onion, sliced
- Any other veggies you might like…sometimes we use frozen green beans, frozen cauliflower, mushrooms, etc. On this particular day we had mushrooms to use so I quartered them.
- Olive Oil
- Salt and Pepper (I also pictured Old Bay and Tony Chachere’s. If you have a favorite spice blend don’t be afraid to use it!).
So What Do You Do Next?
- Preheat the over to 425 degrees Fahrenheit.
- I coin and cut in half the polska kielbasa. You can leave the coins whole, but I cut them in half to make sure that there’s enough for my family of four. Take this time to also slice up your onion and quarter your mushrooms if you haven’t done so already.
- Spray the pan with cooking spray.
- Here’s the fun part….dump all of the ingredients on to the tray. It doesn’t have to be beautiful. Just make sure everything is spread out enough to ensure even cooking.
- Drizzle everything with olive oil. Sprinkle with salt, pepper, or whatever seasoning you’re using.
- Place this in the oven and let it roast for about 20-30 minutes. My husband likes his veggies a little crunchy, so we don’t let them cooking much longer than 30 minutes. If you want a little extra “char” use the broiler setting towards the end. I typically set mine to medium high and let it broil for about five minutes.
- While the sheet pan is in the oven, take this time to prepare whatever starchy side you want to go with it. We usually serve ours with egg noodles, but we’ve also had rice or roasted potatoes with it in the past. Trying to avoid breads and pastas? No problem! You could also serve this over zucchini noodles or cauliflower rice.
- When everything is done, put the sheet pan yummies over your noodles or rice and enjoy! If you’re like me you may add some soy sauce or teriyaki sauce on top. My husband likes to sauce his with hot sauce or Sriracha. Enjoy!
