Savory Pumpkin Pizza

Ingredients
  

Sauce

  • 1/3 cup pumpkin puree not pumpkin pie filling
  • 1 tbsp olive oil
  • 1 tsp water
  • Dash cayenne pepper or more if you want it a bit spicier
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder

Crust and Toppings

  • 1 can refrigerated Pillsbury Pizza Crust split in half
  • 2/3 cup low-moisture shredded mozzarella cheese
  • 2 tbsp parmesan cheese heaping
  • 2 tbsp green peppers diced
  • 2 slices red onion thin, cut into quarters
  • 3 grape tomatoes diced
  • 1 tsp oregano optional

Instructions
 

  • Preheat the oven to 400°F.
  • Spray the two 8in pizza pans with cooking spray. Open the refrigerated pizza crust and divide it in half. Place each half in a pizza pan and shape to the size of the pan. Set aside.
  • In a small bowl, mix together the pumpkin puree, olive oil and water. Then add the cayenne pepper, salt, pepper and garlic powder. Mix together and set aside.
  • Once the oven has reached 400° place the crusts in the oven and allow them to prebake for 5 minutes. During this time, prepare your toppings if needed.
  • Once the crust has prebaked for 5 minutes, remove it from the oven. Let it cool for a few minutes before spreading the pumpkin pizza sauce on each pizza. It shouldn't be super thick, just enough to cover each pizza crust.
  • Spread the mozzarella cheese and parmesan cheese over each pizza. Then add your toppings. If you'd like, sprinkle a little more cheese on top. Dust lightly with oregano before putting the pizzas in the oven.
  • Allow the pizzas to cook for 10-12 minutes before removing them from the oven. Once they are done, remove them and let them cool for a few minutes before cutting.
  • Slice the pizza, sit down and enjoy!

Notes

  1. You may use whatever toppings you'd like! Other toppings I'd suggest would be bacon crumbles, sausage, or spinach. It really can be just about anything you would put on "normal" pizza.
